Southern Favorite Recipe

I just heard from a customer in South Carolina with a great recipe using Goji Berries. Carrot Salad is a favorite in her family and she shared her recipe with me.

Grate about 4-5 carrots. Add one small can of crushed pineapple. Add 1/2 cup of re-hydrated Goji Berries and 1/4 cup of golden raisins. Add just enough mayo or salad dressing to combine. Serve Cold!

Remember, the liquid left from re-hydrating the Goji Berries is very nutritious. Pour it over ice and enjoy or add to a pitcher of herbal iced tea!
